Spanish Rice


For the last several months I have been eating hot, spicy food. I am not sure exactly what has come over me but I crave hot things. I put a whole jalapeƱo pepper in this dish of Spanish rice. I also added a lot of garlic cloves and onion. I make this often anymore, maybe 3 times a week. I also make fried pasta with tomatoes, peppers and garlic at least once a week. To make this I heat about 1 teaspoon of olive oil in a skillet. When it gets hot I add some kind of pasta, shells work best but I will use rigatoni also. I stir the pasta until it is a little brown and then I add water, canned tomatoes, and all of the spices. Then I cook it on low until it is done. The pasta stays a little aldenta, the way I like it. This is not a great diet for someone that is overweight, but it is hard for me to eat meat anymore. It almost gags me to look at it.
