The Bread is Good

Not as good as Mama's The cinnamon rolls ran over, smoke alarm went off, fire department came, house burned down, but we are all fine....

trying to Make mama's Cinnamon Rolls...

Remember Mama always made the best cinnamon rolls. We were so poor we did not have power sugar so mama would take the left over flour, sugar, and cinnamon left over on her board and put that on the rolls. Then right before she put them in the oven she would pour heavy cream over them. This would make the most delicious goo on the bottom of the cinnamon rolls...

I never have a lot of flour mixture left on my board after I cut the cinnamon rolls. I try to be very neat and keep it all in the rolls. so I make up a little pile of flour, sugar, and cinnamon and put on top...I have tried this several times...They are never as good as Mom's but the kids like them. Last week I spoke to Brother and he said he had made some and used a can of canned milk and it was pretty close to Mom's. He said another can of milk and he would just about have it right....I told him that will run over in his stove and make a mess...I then remembered Mama's often ran over in the oven...He said he also used lots of butter...Mama always said they were never as good with canned milk but she did have to use that sometimes...

I use a whole stick of butter in the filling but today I cut another stick up on top of the rolls...I also added 2 cups of whipping cream...I am sure this will run over in my oven. It is a good thing it is all ready dirty...

I had to make sure the rolls are baking on the top rack and the Cinnamon buns are on the bottom...I just hope it does not set off the smoke alarms. It is only a little before 7 here and everyone is still asleep....I guess if the cinnamon rolls run over too bad everyone will wake up soon..

I have drank a pot of coffee all ready but if the cinnamon rolls look good I may have to make another pot...We will see..

Bread...



I always say I am making bread but I actually have not made a loaf of bread in years....I use bread dough and make rolls and Cinnamon rolls....Not to be confused with my cinnamon ring which takes way more fat..

Kenzie was disappointed that I did not make my rolls for Thanksgiving the other day. She asked me why I did not use my recipe. I told her because Betty had posted a recipe and I wanted to try it and I really do not have a recipe that is why sometimes my rolls are very good and sometimes. not so much... She wanted me to make rolls at 6 last night. I told her making rolls was just like making a pot of beans, you have to make them in the morning. Personally I have never tried to make them in the evening. But Fleta made them for me and Winnie one evening about 5PM and they were not fit to eat so I know you can only make them in the morning. Fleta, that may hold true for pumpkin pies also. I'll bet you did not make that last one in the morning. That probably was the problem.

Here is a picture of my flour bucket. I often buy it by the 25 pound bag from Costco which fills mt 5 gallon bucket. I buy Pillsbury bread flour since 90% of the time it will be used for bread. I throw a few bay leaves in it to make sure no bugs come to visit.

I use about half milk and half water. If I have throw away cups I always use those for the yeast and Milk. I filled one of the red 16 oz throw away cups with milk and stuck it in the microwave till it forms a skim....In the mean time I dumped another red plastic cup of water in the mixer bowl and then got luke warm water about 1/4 cup in the red cup again... To this cup I add a dash of sugar and about 3 T. of yeast...I measure in the palm of my hand. I always buy yeast in the 2 pound bulk then I put it in Tupperware and store in the freezer.... I sat the yeast mixture aside..

To the mixer bowl with the water in it I added maybe 1/3 cup of sugar. An egg, sometimes 2. a good T. salt, again measured in the palm of my hand, the scalded milk, and I dump in some flour.

You will notice I have a Tupperware sifter in my flour. It is fairly new. I have only had it 10 years or so...It holds about 2 1/2 cups...give or take... I dump a full sifter of flour into the mixer with the Milk, water, egg, salt, sugar, and I add 1/2 stick of margarine, along with a handful of instant potatoes (Pat's idea, and I have been doing that for at least a year. It makes the rolls lighter....Try it...). Then I start the mixer. I realise it is very runny so I add another sifter of flour. I want it thicker than a thick pancake mixture.

I then let it mix while I put all of the mess away, except for the flour pail. This lets the gluten in the flour come to life. After about 3 minutes I go back to the mixture and stick my finger in the goo. If it is cool enough I dump in the yeast mixture which is about to bubble over the top of the 16 oz cup, then I dump in another sifter of flour and let it mix some more. When all of that is mixed good then I can judge about how much more flour I will need. Today it was another sifter full. After just a minute it begins to pull from the sides of the bowl and I can see not all of the flour has mixed in yet. So I figure I am about right.

Then I just let it mix with the bread hook maybe another 3 or 4 minutes. I then dump the bread into the floured cutting board. I make sure all of the dough is pulled from the bowl. Today I had to work just a little more flour into the dough, maybe a half a handful. I then buttered the bowl. Flopped the dough back in and gave it a turn. Placed a towel over the top and I am proofing it in a closed oven with the light on.

After I took that picture, and saw it on the computer. I went back into the kitchen and cleaned the front window of the stove with Windex, Erin. For good measure I Windexed the top of the stove also.

At the point where I put it on the dough board I can tell if it is going to be really good, or a little off...This day it will be very light and fluffy bread..

Bread is so easy. I would rather make bread than almost anything...Maybe that is why my butt is so big. Here I have posted another Sister recipe that no one will be able to follow....We all cook the same...

ahhhhhh

A clean house. I got up this morning and cleaned up all of the mess from having the kids over this past 3 days so much. I mopped and vacuumed all of the floors. Then Kenzie and I went to see the movie 'New Moon.' She was dying to see it. I had a good nap. All was well. When we came home she hopped in the tub and has been reading a book and just resting. It is very quiet here.

Bill put up my tree this morning before he left. Which I really appreciate. I have one set of limbs that the lights are not working on. I have one of those little testers and will have to find out which bulb is bad. I have had a pre lit tree for years. I would hate to string those lights.

We have church in the morning and them Missy, Benjamin, and Kenzie are going to the mall to drop off the Christmas Angel Gifts. And to sit on Santa's lap...I may go if I am up to it.
We have been more than a little busy around here.

Tomorrow evening I will put on my new Elvis Christmas CD's and we will decorate the tree... Kenzie has almost all of the gifts wrapped...

Brother and Sister...

When my kids were young these two fought like cats and dogs. Kris always stood up for Bill...Since Bill was about in 11th grade this is the Sister that always takes up for him....Bill needs to remember that.

Last evening while I looked after most of the kids, Bill, Missy, Kimmie, and Kenzie hauled all of the stuff out of my closet and went through it. Missy took control of the $'s with a pen and paper....Most of us owe her, well I think it is only me at this point. Missy got all of her stuff divided from the Christmas Angles,Women's shelter, and for her Son's presents...Bill got all of his pulled out and Kenzie took care of all of ours. Missy loaded all of hers in her car. Then Kimmie and Kenzie came into my bedroom and wrapped while I sat on the bed and instructed. It was hard work. I fell asleep.

Earlier in the day Kenzie had gone with Missy to the dollar store and picked out paper and bows. Missy got 4 sheets of name tags and I told Missy we needed one of them. She went to the car and got me a sheet. I wanted the prettiest ones...Then on her and Benjamin's ride home apparently he asked Mama why she had to give the prettiest tags to Granny. I am sure Missy's reply was something like, I don't know, here is my phone, you can call Granny and ask...I knew I was in trouble when I heard his voice on the line...Either he wanted to spend the night again, and I was tired, or I was getting a chewing out.
He said, "Granny, why did you take my Mama's pretty name tags?" You know, with his mama at his side he has no fear...Without hesitation I replied, " Because Benjamin, I was wrapping your present and I did not have a name tag and I thought, if I did not have a name tag to put your name on it I might get confused and give your present to one of the other kids, and I did not want that to happen!"
As you can imagine I was no longer in the dog house with that Boy. Teach his Mama to try to get me in trouble!
