Sweet Potatoes


Melissa and I belong to this Vegetable Co-op...We pay $20. every 2 weeks and we each get a laundry basket of fruits and vegetables. The pick up site is close to Missy's house so she picks them up every other Saturday and then usually brings me my basket. If there is something in there that her or Benjamin especially like I tell her to keep mine also. She has somewhat the same system with me, she gives me all of the stuff she does not want.....this is usually something I do not want either. This is how I ended up with 10 big ole sweet potatoes.

I hate to waste any of this produce so I try to eat most all of it. I wanted to take these sweet potatoes to Kris but my suit cases were close to that 50 pound mark since I had a bunch of Benjamin's clothes for Baby Jake and 2 big quilts I had made. I thought maybe the sweet potatoes would have gone bad while I was away but they did not.

So for supper I cooked me a sweet potato to eat. I remember Betty saying she just eats them plain. I microwaved it and it took 9 minutes to get soft, they are really big. Then I busted it open and added a little butter. It was not very good, so I added a little cinnamon and some artificial sweetener. It still was not very tasty so I added a smidgen of molasses, then it was just not fit to eat. I did finish most of it off but unless I can convince Mike, Benjamin, or Austin that these taste great I doubt if another one is eaten.

I buy a bushel each winter...they keep all winter. I had some left this fall from last year...they were still good. They need to be kept in a cool, dark, dry place.

i have tried cooking in the mico and they are not good but if you bake them in the oven they sre sweet and good.
