Tuesday...

A very productive day!

Today I had a dozen or so apples that needed to be used. I made some great apple butter! I have been making apple butter this way for several years.

I wash the appled and slice them up , using everything except the core. I put them in a large bowl that is microwave safe. Today I used a Tupperware plastic bowl. After I have all of the apples sliced or diced whichever is easiest. I cover the top of the bowl with plastic wrap. Today I had to microwave them 18 minutes. I cook them till they are soft, using NO water at all. After they are soft and cooled some I start putting then in my Magic Bullet blinder. There is a little juice in the bowl from the apples. After I blend 1 jar of apples I pour out about half of the container back in the microwaveable bowl and fill the bullet again with apples. This would be about half all ready blended apples and half unblended ones. The blended apples now makes it easy to blend the rest. I continue this until all of the apples are blended like baby food. Then I add brown sugar, cloves, and cinnamon to taste. I mix it up really good and this time I lay a large paper towel over the bowl and microwave some more...I microwaved this another 18 minutes, stirring once. By using a paper towel and not plastic wrap it allows the apple butter to get thick and dry, just like slow baking it in the oven. Also the paper towel keeps it from splattering all over the microwave. This apple butter is so good. I think mainly because no water is added and you are able to leave the skin on the apples which really gives it so much more flavor. I have made this using all kinds of apples and I can tell very little difference between using a granny smith or a red delicious...Give it a try. It is so easy. But you do have to have a good high power blender since there is no water added.
 

I mowed the front and back yard today and ran some errends mostly for the old folks home. It didn't hurt me and it did help them so I guess it was good of me to do.

It has just been beautiful here today. I think it hit 80...I planted some flower seeds. I will see if they come up.

Last weekend Greg sanded down Missy's wooden swing. I am going to put a few coats of varnish on it tomorrow so it will be all ready for Greg to rehang by the weekend.  I spoke to him and told him to get ready to BBQ some more wings. He said he is tired of wings...If we had a smoker we would do a brisket...But we don't have one. So I guess that is out.  So I am not sure what he can cook. He had better think of something by the weekend. I will be hungry by then.

Friday I am making fahetas. I have a bunch of bell peppers and onions to grill with the steak. I often just eat the onion and bell pepper on a flour tortilla and hardly any meat. The grilled peppers and onions ate the best!

It's 9:30 and I am going to bed...

Oh, the apple butter looks so good. I put apple sauce on my toast this morn, but that butter would have been so much better.
